SEAR-IOUSLY GOOD GRILLING

 

GRILLED MIXED VEGETABLES

Ingredients

1 tbsp. brown sugar

1 ½ tsp. basil leaves

½ tsp. salt

1/8  tsp. ground black pepper

2 tbsp. olive oil

8 asparagus spears (ends trimmed)

1 medium red bell pepper (cut lengthwise)

1 medium zucchini (cut lengthwise in strips)

1 medium squash (cut lengthwise in strips)

1 small red onion (cut into ½ inch rounds)

1 small sweet potato (thinly sliced)

preparation

• Mix brown sugar, basil, salt, garlic powder& pepper in a bowl.  Drizzle olive oil over vegetables in a large bowl & toss to coat.  Add seasonings & toss again to coat well.

• Place vegetables in grill pan and grill over medium heat for 10-12 minutes

MEXICAN
STYLE CORN

Ingredients

1 tbsp. brown sugar

1 ½ tsp. basil leaves

½ tsp. salt

1/8  tsp. ground black pepper

2 tbsp. olive oil

8 asparagus spears (ends trimmed)

1 medium red bell pepper (cut lengthwise)

1 medium zucchini (cut lengthwise in strips)

1 medium squash (cut lengthwise in strips)

1 small red onion (cut into ½ inch rounds)

1 small sweet potato (thinly sliced)

preparation

Remove corn form husk and remove all silk

cook

Grill corn until tender. Remove corn from grill & spread 1 tbsp. of mayonnaise on each ear. Sprinkle cheese, cilantro & chile powder over corn. Squeeze fresh lime juice over corn & serve immediately
